Loma Fria, Nicaragua
Introducing our FED House Coffee: Loma Fria, Nicaragua
Introducing Our New House Coffee
We are thrilled to announce our house coffee, Loma Fria, sourced from the beautiful Nueva Segovia region of Nicaragua. This exceptional coffee is produced by the Cafetos De Segovia mill and boasts a unique flavour profile that is sure to delight your senses. The Cafetos De Segovia mill works closely with the smallholder farmers in Nueva Segovia. They ensure that the farmers receive fair prices for their beans and have access to the resources they need to thrive.
Geographical Origin
Loma Fria coffee beans are grown in the Nueva Segovia region of Nicaragua, known for its rich volcanic soil and ideal coffee-growing climate. The high altitude and cool temperatures contribute to the coffee's slow maturation, resulting in a dense bean with complex flavours.
Coffee Varietals
This coffee is a blend of Bourbon, Catuai, and Caturra varietals, each contributing unique characteristics to the final cup.
Bourbon: Known for its sweetness and balanced acidity.
Catuai: Offers a medium body and bright acidity.
Caturra: Contributes notes of citrus and chocolate.
Tasting Notes
Loma Fria coffee has a rich and satisfying flavor profile, with notes of chocolate, toffee, and a hint of bourbon. The coffee's sweetness is balanced by a subtle acidity, making it a perfect choice for any time of day.
About the Producers
Loma Fria coffee is produced by a community of smallholder farmers in Nueva Segovia, who are committed to sustainable and ethical farming practices. The Cafetos De Segovia mill works closely with these farmers to ensure that they receive fair prices for their beans and have access to the resources they need to thrive.
Ecological Efforts
The producers of Loma Fria coffee are dedicated to protecting the environment and preserving the natural resources of their region. They use sustainable farming practices, such as shade-grown coffee and organic fertilizers, to minimize their impact on the ecosystem.
Los Tablones, Guatemala
Introducing our FED Guest Espresso: Los Tablones, Guatemala
During transitions between our House Coffee’s we like to run a ‘Guest Coffee’ for a couple of weeks to a month. This coffee is selected as an opportunity to showcase coffee’s from other countries around the world with a slightly more complex flavour profile than our House selections. Usually providing a slightly more refined acidity and sometimes a delicate fruity/floral aspect to the cup. This coffee from Baudilio Lemus at Los Tablones, Guatemala is no different.
Yallah Coffee - We’re proud to offer this small lot from Baudilio Lemus, sourced during our sourcing trip to Guatemala earlier this year. We wanted to find something exclusive for FED that showcased the best qualities of Guatemalan coffee and here it is. Expect a silky smooth, rich & complex espresso that you can drink all day long.
Baudilio’s father planted his first coffee about 62 years ago, starting with less than one hectare of coffee, and began learning all he could about the crop. They’ve grown step by step, little by little. Now, they have a wet mill on the farm and have focussed their efforts on improving quality through better ‘processing’. Controlling the process from start to finish.
As is typical for this region, they have over 90% shade grown coffee which protects the soil & slows maturation of cherries. They also work actively to protect the small springs & water sources on the farm. We’re proud to say Baudilio received a premium of 46 cents per pound over commodity price for this lot.
Coffee At FED
Information about our Coffee and our relationship with Yallah Coffee Roasters and the farmers who produce our coffee
Coffee is the lifeblood of any cafe business. It is a product so vitality important to our way of life as people. Here in the UK it is a daily ritual while overseas it is a source of income and acts as the foundation of the many communities that grow and live amongst it. We are really proud of the coffee we offer at FED. Sourced and roasted by the wonderful guys down at Yallah Coffee Roasters just outside of Falmouth whom we have worked with since the very start. A relationship built on genuine friendships, but also an unwavering commitment to provide a variety of coffees all year round that are sustainably sourced and of course, have exceptional quality.
Richard Blake, founder and CEO of Yallah - We’re a small crew, with a lot of love for exceptional coffee and the many hands that touch it. Coffee is our vehicle, and it’s taken us far and wide; forming long-term, meaningful relationships along the way. This includes origin partners and those closer to home, like Ross, Char and the whole crew at FED Cafes. From day one, before the first lease was signed we knew they would create a special place. We're incredibly proud to have been part of that journey. Nowadays, we source bespoke for FED, knowing our buying standards are aligned with theirs, makes things easy - we never need to compromise on quality, it's just a task of sourcing the best and most sustainable coffees we can find.
The real strength of Yallah lies simply in their morals. They hold the gold standard for ways of sourcing coffee sustainably (read more here) and have a contagiously positive outlook on life in general. They provide the teams at FED with regular training sessions, presentations and just general love which is everything and more you can want in a business partner.
In a world where it is difficult to know if the money you are spending is going to a good cause. We believe that If the story is told correctly and authentically, that people will choose to spend their money thoughtfully and with intention. Therefore, giving back to the people around the world who are working towards a sustainable future. Companies such as Yallah, and the producers of our coffee’s ARE those people and we are so privileged to work alongside them.
FED House Coffee & Our Plan….
This year we worked with Yallah to source and serve three bespoke coffees for our FED House Coffee. Two from Brazilian farmers, Adolfo Ferreira at Pico Mirante, Edison Carson at Sitio Gourita, and lastly the producers at Loma Fria in Nicaragua. These coffees alongside our Guest espresso and Filter Coffees have made up our Coffee Calendar for 2025.
These three producers are very special to us. If you have been to one of our cafes in the last few years you’ve almost certainly tasted for yourself how delicious their coffee is. We look for a flavour profile that is deep and rich, sweet and chocolatey, nutty notes of almonds or pecans, with a slight acidity of mandarin or cherries. Every single year these producers deliver. This consistency of quality and quantity, coupled with the story that Yallah so compellingly tells has recently led to a very important joint decision between café and roaster. We aim to buy our House Coffees from ONLY these three producers year on year from now on.
But why is this important?
Committing for the foreseeable future to sourcing something as important as coffee from the same set of producers is a real example of trust, belief and commitment and has many benefits. The farmer knows that if they produce a similar coffee in quality and taste profile each year that Yallah will always buy off them, giving them assured income and stability so they can invest and develop themselves with confidence. In turn we know as a cafe that each season we are in good hands and our coffee is going to taste amazing and will be grown with the utmost care placed on sustainability and traceability. Beyond this, the real thing that is enabled through this style of relationship is something more nuanced and rare. An opportunity to get to know the producers personally.
In 2025 we had the unique experience of sending a member of our FED team to visit one the producers of our coffee face to face. Our Head of Coffee joined Yallah and Cargo Coffee Importers on a trip to São Paulo, Brazil to visit Adolfo Ferreira at Pico Mirante. The purpose of the trip was to see how the farm ran, try some of next seasons potential coffee’s and eat and drink with the workers there.
The team meandered through the hundreds of rows of coffee plants, picking and trying fresh ripe cherries directly from the trees. Adolfo stopping every few minutes to talk and provide fascinating anecdotes on the history of the farm, particular plot or to shed light on the meticulous practises he uses to look after each of the many varieties of coffee growing there. They met the amazing people who work the land for Adolfo, so skilfully and relentlessly harvesting and sorting cherries ripe from unripe, hauling enormous bags across mountainous and sometimes almost vertical terrain. At the end of it all, being treated to some true Brazilian hospitality with a (ridiculously sized) churrasco, homemade cachaça and plenty more laughter. All in all, a invaluable experience with lessons and stories that can be brought home to the teams at FED.
For our Head of Coffee, this was a trip of a lifetime. The kind of trip that obviously gives a whole new appreciation for this amazing product that we all love, that can bring people together no matter where they are in the world. This is how we aim to source coffee’s in the future, with trip’s and connections like this becoming a very important and essential recurring practise.

Introducing Big Booty Christmas — Our Festive Batch Brew
We’re excited to announce that Big Booty Christmas is now pouring in all our cafés as our seasonal batch brew. It’s bright, joyful, and here for a very limited time over the Christmas period.
And for those who want to take the festivities home, we’ve managed to get hold of a small number of retail bags, available exclusively through our website.
What Is Big Booty Christmas?
Big Booty Christmas is our seasonal collaboration with Yallah Coffee, featuring a washed lot from the community of Taferi Kela in Sidamo, Ethiopia.
This coffee comes from smallholder farmers working closely with Bette Buna, a project dedicated to rebuilding coffee forests, regenerating soil, and investing in community-led agriculture in the highlands of Sidamo.
The lot is washed processed — cherries are hand-picked, depulped, fermented for 24–36 hours, then washed and dried slowly on raised beds. The result is a refined, elegant cup that Yallah celebrates each year through this limited festive release.
Flavour Profile
This year’s Big Booty Christmas is:
• Fruity & floral
• Bright and clean with lively acidity
• Naturally sweet, with delicate top notes
Expect a cup that’s refreshing rather than heavy — a beautiful contrast to the richness of the Christmas season.
Why This Coffee Matters
We’re genuinely lucky to have a small stock of this coffee. Yallah’s connections at Taferi Kela run deep, and thanks to our ongoing relationship with them, we’ve been able to secure enough to serve in our cafés and offer a handful of retail bags online.
Bette Buna’s work on the ground includes:
• Restoring coffee forest ecosystems
• Replacing invasive eucalyptus with thriving coffee trees
• Supporting local farmers with training, seedlings, and sustainable practices
• Rebuilding soil and increasing biodiversity
By offering Big Booty Christmas, we’re helping celebrate a community that grows excellent coffee while caring for the land it comes from.
Where to Find It
• In our cafés — We’re serving Big Booty Christmas as batch brew throughout the Christmas period, while stocks last.
• Online — A very limited number of retail bags are available exclusively on our website:

This festive release is just the beginning. In 2026, we’ll be offering more small-batch, limited-release coffees through our website — including some very special sail-ship coffee arriving in the spring. Our partnership with Yallah continues to grow, and we can’t wait to share more unique lots with you.

Introducing Our House Coffee: Pico Mirante, Brazil
We’re thrilled to introduce our new House Coffee — a stunning single-origin from Pico Mirante, a farm nestled among the lush mountains of South Minas Gerais, Brazil, just outside the town of Monte Belo.
This coffee comes from Adolfo Vieira Ferreira, who has owned and meticulously managed Pico Mirante for over 40 years. Earlier this year, our Head of Coffee joined the team from Yallah Coffee and Cargo Coffee Importers on a visit to the farm, meeting the producers of one of our house coffees for the very first time.
Walking through the rows of coffee trees with Adolfo himself was an unforgettable experience — a chance to see, firsthand, the dedication and innovation that shape every harvest. His passion for quality, sustainability, and progress radiates through every corner of Pico Mirante, and it’s a privilege to bring this coffee back home to FED.
The 2025 Harvest
During our visit, the pickers were in full swing, and we were lucky enough to cup some of the first pickings of this year’s harvest. The coffees were incredibly fresh — vibrant and full of promise. After a challenging 2024 season, Adolfo was optimistic about the year ahead: yields are up, and quality is looking even better.
The cupping felt particularly special for us, as having the producer, importer, roaster, and café all gathered around the same table is a rare and privileged moment for all.
In the Cup
This lot from Pico Mirante is everything we love about Brazilian coffee — and a perfect fit for our house profile. Expect:
Dark chocolate richness
A bright touch of mandarin
A smooth, almond finish
It has a brilliant balance of richness and acidity and deeply satisfying — exactly what we want our house coffee to be.
Why It Matters
We’ve been buying Adolfo’s coffee from Yallah Coffee for a couple of years now, and every season his coffee stands out as one of the very best in our rotation of house coffees. But now, beginning a direct relationship with Adolfo and Pico Mirante means even more.
It represents what matters most to us at FED:
Long-term partnerships built on trust
Sustainable farming practices that care for people and planet
Genuine respect for the producers behind every bean
We’re so proud to share this coffee with you — not just because it tastes incredible, but because it tells a story we deeply believe.
